Gooseberry sore-fly...!

Every year something eats all the the leaves in fact strips the plants but I have never seen any thing doing it.

I suspect this is Gooseberry Sawfly. The larvae, which look like caterpillars strip the leaves completely. You can use a pyrethrum based spray like Insect Killer Spray. This is a natural poison that kills the larvae on contact. It is also safe to use on edible plants. As soon as you see the larvae or damage, spray the plant thoroughly. Hope this helps.
