Our Daily Express-published horticulturist and photographer Martin Fiddes says;"You need to taste forced rhubarb to really appreciate how tender and sweet the stems are. Get ready with your rhubarb forcer in mid-winter once the plant has 'enjoyed' a period of cold to break dormancy and then pop it over the top.
The exclusion of light will cause the plant to grow without chlorophyll - I remember it being termed etiolation from my college days - and the soft, sweet stems will be produced.
Don't harvest any more shoots from a forced crown (it needs to recover), only force a crown two or more years of age, don't force the same crown two years running and when harvesting naturally produced stems, for every one you take for yourself leave one for the plant!"
